Carrot Loaf
3 eggs 1 1/2 cup liquid oil 2 cup sugar 2 cup finely grated carrots 1 sm can undrained, crushed pineapple 3 tsp vanilla 3 cup flour 3 tbsp cinnamon 1 tsp salt 1 tsp baking soda Sift flour, cinnamon, salt and soda together. Set aside. Mix eggs, oil and sugar together until well mixed. Add carrots, pineapple, vanilla and dry ingredients to sugar mixture. Mix well. Divide into greased and floured loaf pans. Bake at 350* for 45-60 minutes or until a toothpick inserted in loaf comes out clean. May bake as muffins. Shorten baking time. Freezes well.
