English Muffin Bread

1 pkg dry yeast
1 tbsp sugar
1/2 cup warm water
2 1/2 cup all-purpose flour
2 tsp salt
7/8 cup milk
1/4 tsp baking soda in 1 tbsp water

Combine yeast, sugar, water in a large bowl; sit until mixture proofs.  Add flour,
salt and milk in alternate portions.  Beat until elastic and ready to leave sides of bowl.
Let rise 1 1/4 to 1 1/2 hours, until doubled.  Stir down with wooden spoon and add
baking soda, then beat vigorously for 1 minute.  (Be careful to distribute soda
evenly.)  Butter one (10x4x2) pan and fill with dough.  Let it rise again.  Bake in
a preheated 375* oven until golden (1+ hour) and shrunken from pan.  Cool 5 minutes
and remove to rack.
