Chocolate Snowballs

8 tbsp (1 stick) butter, softened
1 1/2 cup sifted confectioners' sugar, divided
1/2 tsp vanilla extract
1/4 tsp salt
1 1/4 cup all-purpose flour
1/2 cup finely chopped walnuts
24 Hershey's kisses, unwrapped

Position a rack in center of oven and preheat to 375*.  In medium bowl, using a hand-held
mixer set at medium-high, beat butter for 1 minute until fluffy.  Reduce to low speed and
beat in 1/2 cup confectioners' sugar.  Using a wooden spoon stir in vanilla and salt.  Stir
in flour and nuts until blended.  Press tablespoon of dough in palm.  Use thumb of other hand
to shape dough into flat disc.  Place a Hershey's kiss in center of dough.  Bring edges of
dough up to cover kiss completely.  Roll gently in palms.  Place cookies on ungreased
cookie sheet 1-inch apart.  Bake 10-12 minutes until lightly brown.  Roll in confectioners'
sugar.  Store cooled in airtight container.
