Ham-Broccoli Roll Ups

1 pkg rectangular sliced ham
1 pkg Swiss cheese slices
1 pkg frozen broccoli spears (cooked just until tender)
3 tsp butter
3 tsp flour
1/4 tsp salt
3 tsp prepared horseradish
2 tsp prepared mustard
1/2 tsp Worcestershire sauce
1/2 tsp grated onion
2 slightly beaten egg yolks
1 cup pineapple juice (reserved from rings)
1 can pineapple rings
1/2 cup milk

Top each ham slice with Swiss cheese and roll around broccoli spears.  Secure with toothpicks.
Arrange in baking pan.  In saucepan, melt butter, then blend in next 6 ingredients.  Combine egg yolk
and pineapple juice, blend into butter mixture.  Stir in milk.  Cook over low heat, stirring
constantly until thick and bubbling.  Pour sauce over ham-broccoli rolls.  Cover.  Bake at 350*
for 25 minutes.  Serve over white rice with pineapple rings on top.
