Lobster Newburg or Shrimp Newburg

1/4 cup butter or margarine
1 1/2 tbsp flour
1 lb lobster or shrimp
1/2 tsp salt
1/4 cup sherry or white wine
2 egg yolks, slightly beaten
1 1/2 cup light cream or milk

Cooking time 20-25 minutes.  In top of double boiler, melt butter.  Stir in flour, allow
to bubble 1 minute.  Add lobster, salt, paprika and sherry.  Combine beaten egg yolks
and cream.  Warm cream in microwave first then add yolks.  This is quicker or you
can warm the cream in the double boiler with the rest of ingredients.  If
you add the cold cream to the warm mixture be sure to do it very gradually.  Cook
over very low heat until thickened.  Stir frequently.  Serve over rice or toast points.
