Southern Marinated Venison Ribs

1 rack of venison ribs
1/2 cup red cooking wine, for marinating
1 tbsp salt, for marinating
cold water for marinating
1 tsp salt
1 tsp pepper
1 tsp sugar
1 can beer, for sauce
1/2 cup honey, for sauce
1 tsp salt, for sauce
1/2 tsp pepper, for sauce
2 tsp lemon juice, for sauce
1 cinnamon stick, for sauce
1 tsp ketchup, for sauce
1 tsp mustard, for sauce

Marinate one rack of venison ribs overnight in marinating mixture.  Boil ribs for one hour, adding to the water one tsp each of salt, pepper and sugar.  Mix the sauce while ribs are boiling.  Do not allow time elapsed between boiling and baking the ribs exceed two hours.
