Spiced Beef

3 lb brisket
8oz coarse salt
2oz brown sugar
1/2 tsp allspice
1/2 tsp ground cloves
1/2 tsp nutmeg
Pinch of thyme
Pinch of pepper
1 crushed bay leaf
1 tsp salt
2oz black treacle
8oz sliced carrots
2oz fine chopped onion

Rub the beef thoroughly with coarse salt and leave overnight.  Mix sugar, allspice, cloves,
nutmeg, thyme, pepper and bay leaf.  Add the salt.  Drain the beef from the salt and wipe
dry.  Rub the meat with the spice mixture and leave covered for two days.  Pour warm
treacle over the meat, rub the spices deep into the meat every day for a week.  Roll the
spiced beef up and tie firmly.  Simmer in water with the carrots and onion for 3 hours.
Allow meat to cool in the liquid, then remove and press between two boards overnight.

Note:  This is a cold Christmas dish.
