Cold Taco Salad

1 lb ground beef
1 head lettuce
2 med tomatoes
1 (15oz) can kidney beans, drained 
  (light works best, but dark are as good)
1 (16oz) bottle Kraft Thousand Island Dressing
  (Seven Seas is good, but you'll have to 
  add about 1 tsp sugar, because it's too strong)
1 pkg taco seasoning
1/2 cup water
1 cup finely shredded cheddar cheese
1 bag Doritoes, Taco Bell flavor is best,
  if not available, the spicy nacho is just as good.

In a small bowl combine 2 tbsp of taco seasoning and the Thousand Island dressing.  Put
in refrigerator.  Brown ground beef.  While ground beef is browning, cut lettuce into small
pieces.  Cut tomato into small pieces.  Drain ground beef, add water and taco seasoning,
follow instructions on seasoning pkg.  In a large bowl combine the lettuce, tomatoes,
kidney beans, cheese and Dressing.  Put in refrigerator until meat is done.  When meat
is done, drain as much as possible.  Allow meat to cool before adding it to salad.  This
can be kept in refrigerator for up to a day.  Great dish for picnics or potlucks.  Just
before serving, crush Doritoes and mix in salad.
