Party Layer Salad for Ten

1/2 pkg fresh spinach, torn in pieces
Salt and pepper
1/2 tsp sugar
6 hard boiled eggs, finely chopped
1/2 lb julienne boiled ham
1/2 lb head of iceberg lettuce, torn with salt and pepper to taste
1/2 tsp sugar
1 (10oz) pkg frozen peas, thawed but not cooked
1 red bermuda onion, peeled and thinly sliced
1 cup sour cream
1 pt real mayonnaise
1/2 lb julienne Swiss cheese
1/2 lb bacon, crisply cooked and crumbled

It's important to drain everything well.  In the bottom of a large salad bowl, spread the
spinach, sprinkle with salt and pepper and sugar.  Add a layer of egg, a layer of ham,
add a layer of lettuce and spinach with salt and pepper and sugar.  Scatter peas all over.
Pull onion slices apart into rings and spread over salad.  Mix sour cream and mayonnaise.
Spread evenly all over top.  Arrange cheese over top, cover bowl iwth plastic wrap,
refrigerate overnight.  Just before serving, sprinkle with bacon.  Do not toss.  Serve
portions all the way to the bottom of the bowl.  For main course salad meal,
substitute tuna, crab or shrimp or lobster for bacon.
